The company filed for trademark ZABAR’S with the USPTO on January 15, 1974, and was assigned registration number 977006. Their mark was first used in 1940.
The company was founded in 1934 by Louis and Lillian Zabar, who set up a 22-foot-wide storefront at Broadway and West 80th Street in New York City. Louis was a real quality control freak who personally visited smokehouses to inspect and sample the fish, rejecting far more than he was willing to take. He also roasted his own coffee. Its assortment of bagels, smoked salmon, cheeses, and olives is well-known.
Zabar’s family business is still thriving nearly 90 years later, spanning 4 generations. The company continued expanding over the years, and now they occupy almost the whole block front. The founder’s sons, daughters, and their cousins continue to work with them, hand-slicing smoked salmon behind their deli counter until it melts in your mouth; supplying samples of the newest artisan cheeses; spreading out freshly made rugelach batches (using their Bubbe’s recipe); and supervising the roasting of their exclusive coffee blends (they sell four hundred thousand pounds annually!).
Their founder’s beliefs and methods still serve as a source of inspiration: Honour the client. Quality should never be compromised. Present a reasonable amount. Not to mention, never give up on finding the amazing and novel.
